Beef Enchiladas

In a 14" dutch onion using 18 coals on the bottom, brown the ground beef halfway. Add 1/2 cup water. Stir and break up the meat. When the meat is brown, drain off the fat and water. Add the onion, stir, then add chili powder, garlic, cumin and allspice. Mix well and continue to cookuntil onions are clear. remove the mixture from the dutch oven and place in a separate bowl to cool. After mixture is cooled, add chopped green onions and 1/2 of the cheese. Gently mix together.

Wipe out the dutch oven to use again. Set the dutch oven on coals and spray with cooking spray, then spray both sides of tortilla lightly. Fry tortillas on both sides about 30 seconds per side. Remove oven from coals.

Dip a tortilla in heated enchilada sauce, making sure both sides are covered. Put a large spoonful of meat mixture on tortilla, roll it up and put in dutch oven seam side down. repeat until the bottom of the oven is covered with tortillas. Pour remaining sauce over the tortillas and sprinkle the top with grated cheese.

Put the dutch oven over 8 coals and put on the lid with 16 coals (along the edge). Heat until cheese is melted.
