Fried Potato Bake

Pre heat a 14 inch Dutch Oven.

Sauté sausage and carrots until the sausage is beginning to brown. Add cooking oil as needed.

Add onion and garlic and continue to cook for about 2 minutes.

Add potato, beans, salt and pepper. Stir until potatoes are lightly covered with oil.

BAKE at 450° for about 30 minutes until potatoes are done. Use 20 - 24 briquettes on the lid and 6 - 8 under the kettle. Add more to lid at end if you want to brown the potatoes.

HINTS:

Add some mushrooms and/or green chilies.

This is a great way to have fried potatoes without getting grease all over the stove or heating up the house in the summer time.
