Game Hens with Raspberry Sauce

Combine pepper and garlic powder in a bowl. Wash hens and pat dry inside and out. Season cavities with half of pepper mixture. Fill cavities with rice. Close the cavities with skewers. Tuck wings under.

Place hens in 12 inch Dutch Oven. Melt butter with honey in small saucepan and brush over hens. Sprinkle with remaining pepper mixture.

Bake the hens until the juices run clear when the thighs are pierced in the thickest part, turning and basting frequently with the honey and butter mixture.

Cooking time is about 35 to 40 minutes at 450° F.

While the hens are baking, combine raspberries, water, sugar and lemon peel in a saucepan over medium heat. Cook until the sauce thickens, stirring frequently.

Transfer cooked hens to a cutting board and cut in half. Transfer hens with rice stuffing to plates and spoon sauce over the hens. ENJOY!

Charcoal Recommendations: Use 12 to 14 briquettes under the kettle and 14 to 16 on the lid.

Hints: You may want to serve a whole hen per person.
