O'Brien Potatoes

The object here is to have frozen O'Brien potatoes, so it is important to get as much moisture out of the food as possible.

Wash the starch off of the diced potatoes, then pat them dry with paper towels. Put them in a microwave-safe bowl, cover with plastic wrap and microwave them for about 2 1/2 to 3 minutes. They should be only partially cooked at this point. Spread the potatoes out in a thin layer on a cookie sheet.

Cook the pepper and onion in a bit of oil in a skillet. When the onion becomes translucent, spread the mixture evenly over the potatoes. Let the mixture completely cool. Pat the mixture dry with paper towels, then put it in a freezer bag and into your freezer. When you need potatoes, grab a big handful and fry it in a bit of oil.
