Pete and Olga's Chili Verde

Using the dutch oven as a stew pot, boil pork gently in water for 20 minutes.

Remove and let cool a bit. Sauté pork in 3 Tbl olive oil until browned. Remove from dutch oven.

Sauté onion in remaining olive oil. Add green pepper, Serrano pepper, cumin oregano and garlic as you go - in that order.

Add pork, enchilada sauce and green chile sauce. Simmer covered for 45 minutes.

Just before serving, check seasoning and add cilantro.

Serve with a dollop of sour cream.
